I see I have much room for improvement.

Ramblings

It's another sultry day here in North Carolina.  The garden is definitely showing signs of heat stress, and the lawn is getting crunchy.  Thankfully we have air conditioning; I don't know what we would do without it!  Yesterday we went out with our pastor and his family and canvassed a couple neighborhoods in Shelby with gospel tracts, but only for a little while because of the heat.  The evening saw me and the boys at Seedline, a weekly ministry of our church where we put John and Romans booklets together for missionaries in other countries.  Josh was at his Haz-Mat (hazardous materials) class, classes he is taking this whole weekend since he is an EMT-Paramedic.  Today finds me getting a bunch of cooking and cleaning done.  Right now the boys are napping.  This evening after Josh is home and we've had supper, we're thinking of going on a 'family date' to shoot guns and then get milk shakes!  (McDonald's mocha or caramel frappes are so good!)  Have a blessed Lord's Day tomorrow with His people!

Zzzzzzz

Blessing 2 slept nearly nine hours straight last night!  Whoo-hoo!  I could get use to this!  I still woke up (though it was briefly) the two times he usually wakens, and of course though I'm elated he's still sleeping, my mother heart wonders, "Is he OK?"  He was. :)  May this be the beginning of a new sleep pattern!

In the Kitchen

Awhile back I bought some discounted frozen halibut steaks at one of the discount grocery stores we have around here.  I'd never cooked with halibut before, so I was excited to find this recipe in one of my Taste of Home cookbooks (love those books!) which specifically calls for it.  It was a HIT!  A note with the recipe says you can substitute cod or chicken for the halibut if you like.


Alaskan Halibut Lasagna

6 Tbsp. butter or margarine, divided
1-1/2 pounds halibut steaks, bones removed and cut into 1-inch cubes
2 garlic cloves, minced
3/4 tsp. dried thyme
1/3 cup all-purpose flour
1/2 tsp. salt
1-1/2 cups chicken broth
1 cup whipping cream
8 ounces lasagna noodles, cooked and drained
2 cups (8 ounces) shredded Swiss cheese
Minced fresh parsley, optional

In a large skillet over medium heat, melt 2 tablespoons butter.  Add halibut, garlic and thyme.  Cook until fish flakes easily with a fork, about 10 minutes.  Remove and set aside.  Add the remaining butter to the skillet. Stir in flour and salt until smooth; cook and stir until golden brown.  Gradually add broth and cream.  Bring to a boil; cook and stir for 2 minutes or until thickened.  In a greased 13-in. x 9-in. x 2-in. baking dish, layer half of the noodles, halibut, white sauce and cheese.  Repeat layers.  Cover and bake at 350 degrees for 20 minutes.  Uncover; bake 20 minutes longer or until bubbly.  Let stand 15 minutes before serving.  Sprinkle with parsley if desired.  Yield: 8 servings

Years ago, I came across a tract that had this verse in it with this simple explanation--
The Lord Jesus Christ is the Way for going, the Truth for knowing and the Life for growing.  
It has stuck with me ever since.

Boys Will Be Boys...

 ...and that's good!  Our oldest had been asking to see Daddy's gun, so the other day Josh got one out to show him.  He felt very important getting to hold it all by himself!  Here he is as a cowboy, complete with hat (Mommy's sun hat works well until he gets a real cowboy hat), boots and gun.
 Then our 2-year old got to shoot Daddy's .22 for the first time during our church's July 4th get-together.  He enjoyed it so much he didn't want to stop.
 Here the boys are in a wrestling match, or rather, our 2-year old is doing all the wrestling and our youngest is along for the ride.  I think there is going to be much wrestling in our home for the next eighteen years!!

My First Blog Post!

Well, well, I've joined the ranks of bloggers, and I am doing my very first blog post!  I'm excited to be doing this.  I enjoy trying new things!  This will be a 'patchwork' blog--a blog where I share bits and pieces of this-and-that from our lives.  I hope it will be a blessing.
